Iris Oskarsdottir-Vail
Born and raised on a dairy farm in northern Iceland, Iris has worked in the culinary industry since she was 15. Iris was the first woman in Iceland’s history to win their national baking competition. She even did it while still in school for culinary arts and then became a respected judge for baking events afterwards. She traveled Europe working and learning the various tips/tricks/methods to create the delicious items she bakes. Not only is she a award winning baker, but she also has experience making delicious chocolates. Now she brings her passion for creating delicious and beautiful cakes and other baked goods right here to central Maine. One bite and you will taste the difference between good and “the very best”.

Cake of the year 2014
There was great joy in the office of Ragnheiður Elín Árnadóttir, Minister of Industry and Trade, when Íris Björk Óskarsdóttir from Sveinsbakarí came with the Cake of the Year 2014. This was the first time in Iceland’s history that a woman has won the competition and as a student, no less!
